Breakfast Muffins stuffed with Boiled Eggs

Aren’t they looking great for breakfast?

Ingredients:

8 eggs -5 to boil & 3 to the Muffins batter
1 1/2 all-purpose flour
1/4 cups of milk

1/4 cups of yogurt or sour cream
1/4 cups of vegetable oil
1 tablespoon of baking powder

2 teaspoon of salt Spices:

1 teaspoon of paprika
1 teaspoon of black pepper
1 teaspoon of red pepper Greens:
You canadd as much as you want i used total 1 cup of dill, parsley, green onion and green pepper.

Directions:

1. Preheat oven to 200°C.
2.In a medium sauce pan, place and cook 5 eggs on a

medium-low heat, when it comes to boil set your time

for 3 minutes.
3.On the other side, prepare an ice bowl with water

enough for the eggs.
4.When 3 minutes ends, take the eggs and place into

the ice bowl and let them cool.
5.Peel them and set aside.
6.In a large mixing bowl, mix all wet ingredients, sift dry

ingedients and combine two together, add the greens

and mix well.
7. Spray or grease the muffin tray with vegetable oil.
8. Add 2 tablespoons of batter into the prepared muffin

tin, place a soft boiled egg into the middle and cover with another 3 tablespoon of batter. Repeat for all muffin tins.

9.Bake for around 16-18 minutes. enjoy!

Notes

If you like soft boiled eggs inside the muffins, don't boil the eggs too long. If you like hard boiled eggs you can boil them for 5 minutes.
