uuuh! You should really try making these.
If it is summer, you know it is lemon’s season. Popular and must have fruit in any dessert or some meals.
These muffins reminded me of Starbucks type muffins, though i’ve never seen lemon curd muffins at Starbucks. But it tastes the same if they would ever make one, hehe. I am loving it at the moment, you should try and enjoy too!
What you need for lemon curd muffins:
Eggs
Sugar
All-purpose flour
Unsalted butter, at room temperature
Thick form yogurt
Milk
Lemon zest, lemon juice
Baking powder
Baking soda
Vanilla extract
Water

Crumble topping:
Flour
Sugar
Butter, cold
How to make lemon curd muffins:
Preheat your oven to 160°C.
- Beat room temperature butter until it is slightly fluffy and keep beating by adding the sugar.
- Add eggs, yogurt, milk, water, lemon zest, lemon juice and vanilla extract and whisk them all until well corporated.
- Sift the flour, baking powder and baking soda and whisk together.
- Line muffin tins into muffin pan, it makes around 13-15 muffins.
- Pour one scoop of batter into a muffin tin, squize the lemon curd (recipe can be found on my website) or drop around a tablespoon of lemon curd with a help of small spoon and cover it with another scoop of batter. Repeat for all muffins.
- In a small bowl, mix your crumb toppings, butter, flour and sugar and crumble with your fingers.
- Top all your muffins with the crumble topping mixture.
- Bake around 30-35 minutes.Voila! Enjoy ☺️ 🍋

- 1 cup of sugar
- 3/4 cup of yogurt
- 1/2 cup of milk
- 1/4 cup of water
- 2 cups of all-purpose flour
- 1 tablespoon of lemon zest
- 2 tablespoon of lemon juice
- 1 tablespoon of vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- Lemon curd for filling
