I am a fan of eggplant, roasted eggplants with roasted tomatoes, green pepper and garlic. It’s the best vegetable dip you can ever taste!
It is so simple to make but super delicious. It is a great option as an appetizer, party spreads and a side dish for your guests.
The sauce for the roasted vegetables makes it way better! I can eat this every day if i can, it’s how delicious it is!
Ingredients you need:
Eggplant
Bell peppers
Cherry tomatoes
A clove of garlic
Parsley
Olive oil
Black pepper and red chili pepper
Lemon water
Pomegranate syrup, i can say it makes a huge different but still you can leave it out if you don’t have it in hand
Bread
How to make it:
- Preheat your oven.
- Wash and dry the vegetables cut the eggplants in half and make lines on eggplants with a knife, cover all vegetables with olive oil and salt.
- In a baking tray, place a parchment paper and bake the vegetables until the eggplants look golden.
- Take the vegetables out of the oven and let them cool for 15 minutes.
- Cut all the roasted vegetables in small pieces, smash the garlic and mix it all in a large bowl, add spices,lemon and salt.
- Place the sauce on your bread slices or just directly dip it!
- Lastly, add your chopped parsleys and drizzle pomegranate syrup if you like – i highly recommend it.
Roasted Vegetable Dip

- 1 eggplant
- 2 bell peppers
- 9-10 cherry tomatoes
- 1 clove of garlic
- 1 tablespoon of parsley
- 2 tablespoon of olive oil
- 1 teaspoon of black pepper and red chili pepper
- Drizzle of lemon water and pomegranate syrup
- Bread
Instructions
- Cut the eggplant in half, cut the head of garlic clove and place them in a ovenware with all the other vegetables with a spoon of olive oil and salt.
- Bake at 180C for around 25-30 minutes, don't forget to check them out to avoid them burning.
- Cut all the roasted vegetables, smash the garlic and mix all in a large bowl, add spices,lemon and salt.
- Place the sauce on your bread slices or just directly dip it!
- Lastly, add your chopped parsleys and drizzle pomegranate syrup if you like - i highly recommend it.
