This is a baked cheesecake with rich lemon flavor creamcheese filling and delicious strawberry mixture topping!
Isn’t strawberry the best fruit when it comes to dessert? I think, strawberries make every dessert so much better.
As it is summer, it is our best chance to make perfect strawberry desserts and as it was the most requested dessert i made strawberry cheesecake! 🙂
What are the simple ingredients for strawberry cheesecake:
Base:
Oat biscuits
Melted butter
Creamcheese filling:
Eggs
Sugar
Creamcheese
Yogurt
Cornstarch
Lemon juice and lemon zest
Vanilla extract
Salt
Strawberry topping with strawberry jam mixture:
Strawberries
Sugar
Cornstarch
Water
How to make strawberry cheesecake 🍓 :
Preheat your oven to 170°C.Add biscuits and butter into a food processor to break into crumbs.
- Spread into a 9-inch (25 cm) baking pan evenly.In a large mixing bowl, beat the cheesecream until it is smooth and add sugar and continue beating until well corporated.
- Add eggs and mix, then add yogurt, cornstarch, lemon juice, lemon zest, vanilla and salt and mix them well but do not overmix.
- Bake 15-20 mins until the edges golden brown.In a small sauce pan, cook half of the strawberries with sugar, cornstarch, water for about 10 minutes.
- Add the other half of the strawberries into the strawberry jam mixture.
- Let the Cheesecake cool for about 45 minutes, top it with the strawberry jam mixture.
- Let it cool in the fridge and you can serve after 4 hours.

This baked strawberry cheesecake has very rich lemon flavor inside and it is topped with the best strawberry topping! So yummy!
Ingredients
- Base:
- 375g oat biscuits
- 80g melted butter
- Cream Filling:
- 300g creamcheese
- 1 1/3 sugar
- 3 large eggs
- 1/2 cup yogurt
- 1/2 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1/2 tablespoon of lemon zest
- 1/2 tablespoon of vanilla extract
- Pinch of salt
- Strawberry topping:
- 500g strawberries - Half for the jam mixture and the other half is to add to the jam in the end
- 1/3 cup sugar
- 1/2 tablespoon of cornstarch
- 3/4 cup water
