Strawberry Cheesecake

This is a baked cheesecake with rich lemon flavor creamcheese filling and delicious strawberry mixture topping!

Isn’t strawberry the best fruit when it comes to dessert? I think, strawberries make every dessert so much better.

As it is summer, it is our best chance to make perfect strawberry desserts and as it was the most requested dessert i made strawberry cheesecake! 🙂

What are the simple ingredients for strawberry cheesecake:

Base:

Oat biscuits

Melted butter

Creamcheese filling:

Eggs

Sugar

Creamcheese

Yogurt

Cornstarch

Lemon juice and lemon zest

Vanilla extract

Salt

Strawberry topping with strawberry jam mixture:

Strawberries

Sugar

Cornstarch

Water

How to make strawberry cheesecake 🍓 :

Preheat your oven to 170°C.Add biscuits and butter into a food processor to break into crumbs.

Strawberry Cheesecake

This baked strawberry cheesecake has very rich lemon flavor inside and it is topped with the best strawberry topping! So yummy!

Ingredients

  • Base:
  • 375g oat biscuits
  • 80g melted butter
  • Cream Filling:
  • 300g creamcheese
  • 1 1/3 sugar
  • 3 large eggs
  • 1/2 cup yogurt
  • 1/2 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 tablespoon of lemon zest
  • 1/2 tablespoon of vanilla extract
  • Pinch of salt
  • Strawberry topping:
  • 500g strawberries - Half for the jam mixture and the other half is to add to the jam in the end
  • 1/3 cup sugar
  • 1/2 tablespoon of cornstarch
  • 3/4 cup water

Instructions

  1. Preheat your oven to 170°C.
  2. Add biscuits and butter into a food processor to break into crumbs.
  3. Spread into a 9-inch (25 cm) baking pan evenly.
  4. In a large mixing bowl, beat the cheesecream until it is smooth and add sugar and continue beating until well corporated.
  5. Add eggs and mix, then add yogurt, cornstarch, lemon juice, lemon zest, vanilla and salt and mix them well but do not overmix.
  6. Bake 15-20 mins until the edges golden brown.
  7. In a small sauce pan, cook half of the strawberries with sugar, cornstarch, water for about 10 minutes.
  8. Add the other half of the strawberries into the strawberry jam mixture.
  9. Let the Cheesecake cool for about 45 minutes, top it with the strawberry jam mixture.
  10. Let it cool in the fridge and you can serve after 4 hours.
